Meatloaves made in a muffin tin - very cute plus they cook faster! You can even solve the age old problem of to ketchup or not to ketchup the top. In my house the split is 50:50 and individual muffins make it easy to do. This is a recipe I found at All Recipes but modified quite a bit - I added spices and cut out the bread crumbs, adding more eggs instead.
Roasted Eggplant Spread gets better if aged at least a day in the refrigerator so that makes it a favorite of mine. Great on crackers or rounds of cucumbers or zucchinis, or as a dip. Even as a spread instead of mayo!
