I Scream, You Scream...

We all know the ending...we all scream for Ice Cream!  It's going to be hot and humid today in NH.  This summer seems more tropical than usual but excuse will work for ice cream. 

Did you know that July is National Ice Cream Month?  Here's a great fun thing to try with your kids.  This is always a big hit with my kids - even as teens. You can find lots of  fun ice cream facts here plus some science and history behind ice cream.

Recipes for the Fourth of July

It's almost here, the Fourth of July! I don't know about you but for us it means dinner.desset and fireworks.  Our town shoots them from a barge in the middle of the lake and we have a great view.  Here are some of my favorite recipes for that day.

I know Potato Salads and  Pasta Salads are traditonal but I'm scared of the mayo and warm weather combination that can make people very ill. So both the Brown Rice Salad and Asian Salad can be safely served in warm weather.

Mom's Recipes

Many of you know that my mother died recently.  The whole family gathered for a memorial service last weekend - it was great to see everyone but too bad the occasion was sad. 

As always this occasions call for food and I found myself thinking ot the kinds of things my mom cooked.  A sort of What Would Mom Make? type of thing.  I have a number of her recipes scraped already so I thought I would share them with all of you.

Given the era and the fact that there were four of us kids in five years [yes, you read that right]  many of her recipes focused on speed and she was the master of shortcuts.  Also the master [or is that mistress] of making things ahead of time.  Oh and we had a huge freezer growing up which was always well stocked - my mom was the freezer queen and knew to freeze everything!  Anyway, a few of our favorites...

Top Five Biggest Losers

Inspired by DH's weight loss and a biggest losers (friendly) competition at work, I decided to do the biggest losers here too.  These are the recipes with the fewest downloads which is not to say they aren't good recipes but maybe they weren't well timed or something.  A couple have 0 downloads which makes me think I just managed to goof up the link.  Rest assured, these are good - I've tried them all!

1.  Toll House Cookies   

        0 downloads but this is a classic recipe that probably everyone has already.  Still if you need a pretty one....

        2 downloads.  A nice not too sweet recipe for dessert or brunch and it travels well for lunch or snack. For a long time this was DD#2's favorite treat.

Birthday Recipes

Today happens to be my birthday and I thought I would share some favorite sweet recipes with you.  And guess what - it's snowing!  Woo hoo!  Great present eh?

These are a couple of my favorite recipes.  I adore the Strawberry Banana Bread and it comes out well even if you use frozen strawberries which makes it easy to make whenever you want.  The Kugel recipe is from my mom who always referred to it as "Noodle Brunch Dish" and by any name it is wonderful.  And then there is Robert Redford in a Pan - need I say more?

St Patrick's Day Recipes

Being half Irish, I just have to do St Patrick's Day and share some recipes.  The menu is predictable - Corned Beef (with cabbage) and Irish Soda Bread.  A some Toll House Cookies which have nothing what so ever to do with being Irish - they just are good!

I'm not a big fan of cabbage and it does sort of stink up the kitchen a bit but I have found that leaving it out makes the corned beef taste different.  Cooked cabbage is slightly sweet and I think that balances the somewhat fatty nature of corned beef.  So it's worth putting up with the smell for sure.

Fast and Easy

That's what we all want dinner to be - fast and easy.  The trouble is that sometimes fast and easy is anything but good for you.  All the take-out options on my way home seem to abound in fat and calories.  But often at my house we are dashing out for rehearsals or evening meetings so I have two tried and true recipes that I can count on...

Pad Thai is a somewhat americanized version of the classic Thai dish and thanks to the International aisle of the local Shaw's supermarket I can keep the indigents easily at hand.  I keep boneless chicken and fish fillets frozen - both are easy to thaw by soaking in hot water.  The peanut sauce, coconut milk and noodles are easy to keep on hand and here are the ones I use

Now for the recipe - real Pad Thai calls for bean sprouts which is something I rarely have on hand.  Though healthy, they are don't keep very well so I just added more rice noodles to my recipe for Pad Thai.  But if you have them, just cut back a bit on the rice noodles.

Fast Fish Curry

You can easily use boneless chicken for this one too. It is good either way but the curry actually hides the fish so it's a good way of sneaking fish into your menu even if your family isn't wild about fish. LOL

Crock Potting

I love the ease of crock pots - that fix it and forget mentality is prefect for me especially as I am dashing out the door in the morning. But what I don't like is that there is a sameness to the recipes -sometimes it feels like we're having stew every day. Know what I mean?  So I've been on the look out for some different crock pot recipes and here are some I'd like to share. 

The Italian Chicken got two thumbs up from my family which is amazing since it contains cabbage.  The sauce is nice and thick thanks to tapioca.  The Pot Roast makes a nice thick gravy and I've used it for years with good results every time.  And the Winter Veggie Soup really is a meal on it's own with a lovely hearty texture and taste that is great for cold and snowy weather.  So enjoy!
