How Low Can You Go? Stir Fry Dinner

If you've been following the NPR feature How Low Can You Go? , then you know they are challenging chefs to come with a meal for 4 for under $10.  Ming Tsai, who owns the Blue Ginger restaurant in Wellesley, Mass., has a large following thanks to his Simply Ming cooking show on public television.  He came up with this dinner for $9.68!

How Low Can You Go? Another Dinner for Less than $10

Another recipe from theHow Low Can You Go? challenge from National Public Radio (NPR)....

This one's a bit labor intensive but will worth it. Since I live in NH, Spanish spices like Spanish saffron, Spanish sherry vinegar and pimenton which is a Spanish paprika aren't available so I just substituted my own spices and it was wonderful!  Probably made it a bit cheaper too! 

According to NPR the creator of this recipe is chef Jose Andres from the Made in Spain cooking show on PBS.  And his cost was $9.71

How Low Can You Go?

Last week NPR had a feature called How Low Can You Go? which challenge chefs to create a meal for 4 for under $10.  I'm really hoping they will continue it - the chef interviews were pretty interesting and the recipes I've tried were great!

Of course many of us meet this challenge every day though I must admit they were a lot more imaginative than I am.  Sometimes I find recipes that sound great but I either can't get the ingredients here in NH or they are way too expensive.  These were pretty down to earth for once.

Interestingly enough only the Navy chef really met the challenge which was to create a meal, not just a dish.  He had soup, main dish and side for $9.75.  Everyone else had just one dish but I guess adding a salad would be pretty cheap.

Cute Meatloaf and a Great Spread

Meatloaves made in a muffin tin - very cute plus they cook faster!  You can even solve the age old problem of to ketchup or not to ketchup the top.  In my house the split is 50:50 and individual muffins make it easy to do.  This is a recipe I found at All Recipes but modified quite a bit - I added spices and cut out the bread crumbs, adding more eggs instead.

Roasted Eggplant Spread gets better if aged at least a day in the refrigerator so that makes it a favorite of mine.  Great on crackers or rounds of cucumbers or zucchinis, or as a dip.  Even as a spread instead of mayo!

Matzo Brei

Classic passover recipe with a ton of variations!  Breakfast at our house for passover usually consists of some type of Matzo Brei since all other baked goods like bagels and muffins are not available.  My kids always remind me of the time I tried to make passover bagels and, of course, no one would eat them.  Not even the dog! I found the Guilt Free version on the Hungry Girl blog and love the reduced fat/points/calories.  Enjoy!

Brisket

The quintessential dish for any Jewish cook, brisket elicits almost as many opinions and emotions as barbecue sauce.  Everyone has their recipe and secrets - one of my friends makes hers using coke - really!  And it is wonderful.  But I have been searching for my own recipe and I think I found it!  I don't know who Grandma Ethel is but I found her on Epicurious and would like to thank her for this wonderful recipe for brisket.

A couple of things I have learned in my experiments.  The first or flat cut of brisket is leaner and more uniform to cut because it is rectangular but tends to be drier.  The point or second cut is much moister.  In either case, you should arrange it with the fat side up as that keeps it from drying out while it cooks.

Recipes for Passover

Tonight begins Pesach or Passover and that means lots of traditional foods.  The first two nights families and friends gather for a Seder which is telling of the story of the exodus from Egypt.  One of the things about the eight days of Passover is that wheat and leavening is avoid which makes cooking and eating a very different experience!  Needless to say, there are very special recipes that are used and I thought I would share some here.

New Recipes for a New Year

It seems like a good time to post some new ones.  I'm afraid real life has gotten in the way of blogging but more about that another day.  For today it is all about food. To be more specific - two terrific soups and a casserole.

I'm not even sure what made me try the Southwestern Soup - with enchilada sauce as an ingredient it didn't exactly "read well" (as my mom would have put it) but don't let that fool you.  This is amazing.  The Veggie Meatball Soup is from a Cooking for Two magazine my mom sent me.  It's good enough for a main dish and since everything is from the freezer and does not need to be thawed this is a perfect throw-it-together-in-the-crock-pot dinner.  Gotta love those!  Lastly but not least is the Chili Relleno Casserole recipe which my DH found on the back of the dried milk box and asked me to make.  another wonderful find and you can make it as hot or not as you like!

Doughnuts and Cocoa Mix

The cocoa mix is perfect drink for homemade doughnuts and put in a decorated jar, it makes a wonderful gift!  Just don't forget to add a tag with the instructions - I have included one here too for you to download.

Sufganiyot (pronounced Sue-f-gan-oat) are jelly doughnuts which are a popular Hanukkah treat.  Foods fried in oil to remind us of the miracle of the oil lamp are popular so latkes and doughnuts.  We had a few friends over and made some this evening and the kids love watching the dough puff up when it hits the oil.  Don't let the yeast scare you off - these are very simple to make.  They don't rise much with the second rising and will still look flat but puff up while frying.  I use a medium pot filled with oil to deep fry them.
