It seems like a good time to post some new ones. I'm afraid real life has gotten in the way of blogging but more about that another day. For today it is all about food. To be more specific - two terrific soups and a casserole.
I'm not even sure what made me try the Southwestern Soup - with enchilada sauce as an ingredient it didn't exactly "read well" (as my mom would have put it) but don't let that fool you. This is amazing. The Veggie Meatball Soup is from a Cooking for Two magazine my mom sent me. It's good enough for a main dish and since everything is from the freezer and does not need to be thawed this is a perfect throw-it-together-in-the-crock-pot dinner. Gotta love those! Lastly but not least is the Chili Relleno Casserole recipe which my DH found on the back of the dried milk box and asked me to make. another wonderful find and you can make it as hot or not as you like!

We have a similar recipe for Chili Rellenos and it has been a family favorite for years!!
